HAPPY OCTOBER!!!!

It is officially my favorite month out of the whole year… right next to December that is! No, I don’t love October cause my birthday is this month! I love October because it is the time of the year where this beautiful earth shows her true beauty. I love the colors, the smells but most importantly I LOVE pumpkin. I love pumpkin spice lattes, pumpkin cheesecakes…all so smooth, creamy and perfectly spiced.

This is great quick and easy low carb frappuccino recipe that is sure to please! Make it a frappuccino by adding coffee like I did or make it a light pumpkin smoothie using unsweetened coconut milk. The choice is yours!

Lets take a moment and admire this old blender. This awesome piece of equipment is super old but it only took about 4-5 pulses before the ice was completely smooth! It’s amazing how some of the old equipment just never gives up!

Want to make it even grander? Top it with a spiral of whipped cream and a sprinkling of cinnamon. Have fun with it but above all else, ENJOY IT!

 

Low Carb Pumpkin Frappuccino / smoothie 

Ingredients: 

1/4 c. Pumpkin (not pie filling)

1/4 c. Heavy cream

1 tsp. vanilla

1 tsp. liquid splenda or other sweetener alternative

1/2 c. Coffee or Unsweetened coconut milk

1 1/2 cups ice

1/2 tsp pumpkin pie spice

whipped cream and cinnamon as garnish

Directions: 

Blend all ingredients thoroughly in your blender – you will need a blender that can crush ice

Notes: 

Total carbs: 7.1

Total Fiber: 1.8

NET carbs 5.3

Servings: 2

NET Carbs per serving: 2.6
