Besides making ham and cheese omletts, Ham Salad is my favorite way to use up leftover ham. For a delicious treat, serve this Ham Salad with cheese crisps or pork rinds. It is crazy delicious. This egg salad has a few modifications compared to typical pickle relish ham salads. I personally dislike a strong vinegar taste so instead of using vinegar and pickle relish I used about a table spoon of dill pickle juice! It gives it the same tang with out the strong taste.
Also different from most recipes I use hard boiled eggs in mine. As far as a low carb diet goes, eggs are a magic food that are critical to to our weight loss! They are awesome and for me this is a great way to get my eggs in for the week. The other difference between my ham salad recipes and other recipes is the use of fresh veggies. I add onion, banana pepper and red bell pepper for color!
Please be aware that this is a recipe that can easily be carb heavy if you do not pay attention at the grocery store. Ham is one of those meats that you can’t just assume that it has very few carbs. Many styles of ham are honey glazed, or have other additives! Be careful! I found ham at Food City that was Kentucky legend brand that was smoked original ham and it had 0 carbs. I was even luckier to have gotten this ham on sale!
Lets get started!
I started by placing my ham and veggies in the food processor. I pulsed about 4 times to get a thin pasty looking mixture.
After your meat looks something like that photo add in your mayo, pickle juice and garlic powder. Pulse an additional 2-3 times until the mixture is thoroughly combined. Remove the salad from the food processor and fold in the boiled eggs. I fold them in last because I like to be able to taste the chunks of eggs. If you put the eggs in the food processor you cant even taste them.
When its all done place in a bowl, sprinkle with a little salt and pepper and keep refrigerated until ready to serve!
Low Carb Ham Salad (grain free)
3 c. Cubed ham (look for 0 carbs)
1/2 medium onion chopped
1 banana pepper chopped
1/4 red bell pepper chopped
2 hard boiled eggs
1 tbs. Dill pickle juice
2/3 c. mayo (dukes has 0 carbs)
1 tsp. garlic powder
Salt and pepper to taste
Place the ham, onion, and peppers into a food processor. Pulse the mixture 3-4 times until the mixture is chopped together. Add the mayo, pickle juice and garlic powder to the food processor and pulse for an additional 3-5 times until combined. Chop up the boiled eggs and set aside. Remove the ham salad from the food processor and fold in the eggs. Chill until ready to serve.
